The dairy chain in Latin America and the Caribbean plays a strategic role in the rural economy, food and nutritional security, as well as in territorial and national sustainability. In the member countries of the Central American Integration System (SICA), the dairy chain constitutes one of the main pillars of the agrifood system, being a vital source of economic growth, generating employment and income, and contributing to regional and international trade. Furthermore, it has high potential for growth in per capita consumption and value addition, especially through the development of processed dairy products.
